Many times when someone finds out that I eat plant based or more specifically that I don't eat meat they are in shock... then the comments and questions come. The top 3 comments are:
1. I could never eat just salad.
2. I could never give up meat.
3. I like food too much.
I try not to laugh or be insulted but these comments are not based on truth. The TRUTH is that I only eat salad maybe 2-3x a week, I LOVE food & eat often, and if you knew what meat (and processed foods) was doing to your health you MOST definitely would give it up.
It has been about 1.5 years since I changed my way of eating. I was about a third of the way through my nutrition certification course and quite literally could no longer chew and swallow animal meat because of everything that I learned in my course.
The TRUTH is that since eating mainly plant based without ANY animal meat (and very little cheese and dairy) my life has improved dramatically. I don't know about you but the below changes that I have personally experienced are worth giving up meat. Although I find the above statement funny, because I don't feel as if I have given up anything. In contrast I am amazed at the delicious flavors that I was once denying myself of for SO many years!!
Here is what has happened to me personally:
My long term issue with IBS (Irritable Bowel Syndrome) has completely gone away.
The spastic colon that I have had since a child has completely gone away.
The allergies that I suffered with (both food and environmental) since childhood are no longer a factor in my life.
I have lost weight!
My unexplained muscle pains and fatigue (fibromyalgia) have disappeared, but do come back within 24 hrs if I consume eggs or dairy.
My battle with tendinitis on a regular basis has also gone away.
I have more energy and do not require caffeine unless I am on a long road trip.
I no longer feel tired after I eat, quite the opposite actually.
The chance that I will have kidney or gallstones is 0%
The chance that I will develop diabetes is 0%
The chance that I will develop high cholesterol is 0%
The chance that I will develop any type chronic illness is extremely low
Every time I eat I am pouring natural nutrients into my gut which creates a situation where the body's immune system is able to work as God intended.
Now, don't get me wrong. I am not perfect and have 2 vices which I try to limit. If you've read any of my blogs you know full well that they are cheese and wine and it does take discipline to limit these. My advice to clients is to pick just a couple vices that you treat yourself with maybe on the weekends or maybe just in small portions. For example I mainly drink wine on weekends and special occasions. When it comes to cheese I limit it to just a small amount on some veggie dishes and salads.
Friends... do you value your life? Do you want to feel good and energized on a regular basis? Do you want to be on this earth a long-time for your kids, your spouse, or other family members? If so, then TRUST ME; it is ALL worth it and if you focus on the new flavors that you CAN eat you won't be missing anything!!
